Boss definitely changed his grip when he was older and switched to his Monette setup.
He held it in a more traditional way with all fingers under the casings and none under the thirsd valve slide.
I don't have the cut and paste chops but look at any later pic of him with the Monette and you can sure see it.
When in high school I thought it was cool and looked cool to try to grip in the pistol grip way like the boss, with only his one finger above and all others under the third valve slide. I had trouble playing regular stuff with this setting, especially stuff that required pounding the valves down to learn technique and the Arbans and Clark stuff we all had to go through.
I never saw Maynard switch in a concert or in videos of older concerts like you describe Carl doing. Not sure why Carl does it but he is such a monster of a player he could play with his toes and smoke anything!
Grips are something no one, not one trumpet teacher ever told me about, I guess they thought if I was playing ok don't mess with it but I did notice a slight change can be helpful, just be careful not to drive yourself nuts! My opinion is that it does distribute weight and pressure on the chops. Different settings can put more on the bottom lip and less on the top and some cats find it makes the upper register a bit easier to "walk into" if you catch my drift.
I have found it can drive me crazy and I'm very inconsistent if I try to switch my grip in any way even in practice during a tune so I never go there at all!
I just found what I like and one that I like my sound on and I never ever fool around with it anymore.
I was always surprised that different grips do effect even the general sound and tone of my horn. I guess it's about how it vibrates in your hand and how they dampin those vibrations, but I'm in no way a tech or gear guy so I must give a disclaimer that I may not know anything and I'm sure other players on here have more experience about it.
Just wanted to give you my impressions.
Good luck.
