Brassman- It has been interesting, for sure. My fiancee is a vegetarian anyway, but thankfully for no "save the animal" reason. I have turned my diet into a pescetarian one. That way, I can cook whatever we are eating that night (she is a terrible cook, God bless her), and then at my discretion, I can make something that will do well with fish. Probably 5 days a week we eat vegetarian anyway, and then I make something that can easily have some sort of fleshy fish added to it. I really enjoy eating that way, and somehow find I don't miss meat at all. I think not missing has to do with being able to always find fish on menus at restaurants. I am always having to have dinner out with studio heads, or production meetings. There is always some sort of fish selection on a menu at restaurants around here, so I don't have to just order salad. Saves me a lot of headache.

Tonight I am doing a grilled corn and black bean quesadilla with a lime/adobo sour cream.
