On the menu last night...

Loaded the kettle grill with 2-year cured hickory wood and got it burning... let it burn down to nice even bed of embers, then added more hickory that I had soaked in water overnight. Everything was direct-heat grilled, with the lid on to pick up some of the good hickory smoke flavor...

Salmon with a honey / rosemary glaze
Potato wedges
Squash & Zucchini (cut lengthwise, left in thick sections)
Squash & Zucchini (cut into thin disks, basted with olive oil and covered in Parmesan cheese)
Corn on the Cob
Garlic (whole bulbs, soaked in olive oil for 20 minutes before grilling)
Baked Apples (done with a cover on... Pink Lady apple sliced thick, brown sugar, honey)

Yum-O!

...and... the best part is... this isn't cheating on my diet. This IS my diet! (...as long as I take it easy on those apples... )
