GIO -- I make the oatmeal that takes some time -- "Irish Oats" or "Steel Cut Oats"... much more chewy, keeps me fuller longer, and tastes yummy. It does take 20 minutes or so to make, but it is worth it to me.

Yeah, Dave, I hated to eat your share of dinner again last night... but that's the kind of friend I am. We went vegetarian with 'build it yourself soft tacos and nachos' -- a favorite of my kids

Whole Wheat Tortillas
Tostito's Multi-Grain Tortilla Chips
Black Beans with very mild tomato salsa
Refried Beans
Lite Sour Cream
Basmati Rice (no spanish seasoning... my kids like it plain)
Slided Avacado, Tomato, Lettuce, Black Olives
Shredded cheese (cheddar, monterey jack, and mozzarella)
Variety of hot sauces and salsas

I didn't have any chips, and took it real easy on the cheese. I did not take it easy on the avocados... I ate more than 1 whole one myself! ... hey... ya gotta live a little!


The Refried Beans are not canned -- made them myself, you have to pre-make some things the day before -- 1lb dry pinto beans, prepared, cooked down until some beans start to pop, fridge overnight, on serving day, put beans in large low-side saucepan, add 1/2 cup olive oil, 1 cup tomatillo salsa, 2 tsp chili powder, 1 tsp salt, 1/2 cup lite sour cream, 1/2 cup monterey jack cheese, smash and stir on low heat until everything incorporates.

I'm doing most of the cooking this week. My wife is at a Medical Conference and is getting home late every day.
