My peach cobbler yesterday didn't turn out like I'd hoped. It was what we southern hillbillies call a 'biscuit top cobbler' -- it has a fairly high and fluffy crust on top, rather than the dense 'pie crust' type crust. Mine came out too fluffy... and hence... too dry. It was great if you poked the crust down into the peach slurry and let it rest for 5 minutes before you ate... but who wants 'instructions' with their bowl of dessert?

I gotta try those balsamic peaches. I love cooked fruits...
